Gimjang (Kimchi-making tradition)

김장

Gimjang is the traditional Korean practice of making and sharing large quantities of kimchi in late autumn to prepare for the long winter. Families and neighbors often gather to salt cabbages, prepare the seasoning, and pack kimchi together, making it as much a social and cultural event as a cooking task. It's recognized by UNESCO as an Intangible Cultural Heritage. Part of what makes gimjang special is the sheer variety of kimchi. Beyond the famous napa-cabbage kimchi (baechu-kimchi), there's radish kimchi (kkakdugi), water kimchi (mul-kimchi/dongchimi), green-onion kimchi (pa-kimchi), cucumber kimchi (oi-sobagi), and many regional styles, each with its own ingredients and level of spiciness.
("This weekend the whole family is making kimchi.") ("It's gimjang season, so cabbage prices went up.")
