Sundae (Korean blood sausage)

순대

Sundae is a traditional Korean sausage made by stuffing pig or cow intestines with ingredients like glass noodles, blood, and various fillings, then steaming it. It's a popular, affordable street food, often served alongside tteokbokki and steamed innards. One of the fun quirks of sundae is that the dipping sauce varies by region. In some areas people dip it in salt, in others in a spicy seasoned salt, in ssamjang, or even in makgeuk (a tangy soy-vinegar sauce), and locals often have strong opinions about the "right" way. Asking someone what they dip their sundae in can even hint at where they're from.
("Do you dip sundae in salt or in chojang? It varies by region.") ("I ordered sundae and tteokbokki at the snack shop.")
