젓갈

Jeotgal is salted, fermented seafood, such as shrimp, anchovies, oysters, or fish roe, preserved with lots of salt and aged to develop a powerful, briny, umami-rich flavor. It comes in many regional varieties. It plays two roles in Korean cuisine: as an intensely savory side dish eaten in small amounts with rice (a classic "rice thief"), and as a key seasoning, especially salted shrimp (saeu-jeot) and anchovy sauce used in making kimchi.
젓갈은 새우, 멸치, 굴, 생선 알 등의 해산물을 소금에 절여 발효시킨 음식이다. 많은 소금으로 저장해 숙성시키면 강렬하고 짭짤하며 감칠맛이 풍부한 맛이 난다. 지역마다 다양한 종류가 있다. 한식에서 두 가지 역할을 한다. 밥과 함께 조금씩 먹는 진한 감칠맛의 반찬 (대표적인 '밥도둑')이자, 특히 김치를 담글 때 쓰는 새우젓, 액젓 같은 핵심 양념이기도 하다. 예문: - 김치 담글 때 새우젓 넣어야 감칠맛 나.
