Nurungji (Scorched rice)

누룽지

Nurungji is the thin, crispy layer of rice that forms at the bottom of the pot when cooking rice, lightly scorched and golden. It has a pleasant, nutty, toasty flavor and a satisfying crunch. It can be eaten as a crunchy snack on its own, boiled with water into a soft porridge (nurungji-bap) or the tea-like sungnyung. Loved as a nostalgic comfort food, it has even become a popular flavor in snacks and drinks.
