Sungnyung (Scorched-rice tea)

숭늉

Sungnyung is a traditional Korean beverage made by adding water to the layer of rice scorched at the bottom of the pot and boiling it, producing a warm, nutty, mildly toasty drink. It has a comforting, subtle flavor. Traditionally it was sipped at the end of a meal as a natural digestif and to rinse the palate, back when rice was cooked in iron pots that left a crisp scorched layer (nurungji). It reflects an old, waste-nothing style of Korean home dining.
