Meju is a block of dried, fermented soybeans that serves as the foundation for Korea's essential fermented pastes and sauces. Soybeans are boiled, mashed, shaped into blocks, and left to dry and ferment, often hung with straw, developing beneficial molds. The finished meju is then used to make doenjang (soybean paste) and ganjang (soy sauce), traditionally from the same batch. It's the starting point of Korea's deep fermentation culture and the source of its signature savory flavors.
